Ramen Noodle Slaw - A No-Cook Dinner in a Bowl

This salad has long been a standard for barbecues or picnics, which is where I first tasted it. But it's also great as a dinner option for those hot summer days when you just don’t want to turn on the stove. 

​In its original form and in the versions you see all over the web, the recipe calls for packaged coleslaw from the produce aisle, but it is very easy – and much, much cheaper - to make your own.  A pound of cabbage typically costs around 49-69¢ per pound and can cost as little as 29¢  a pound, whereas pre-chopped coleslaw is typically $2 per pound and up.  

As you might expect, I see no point in paying triple the price – or more - for someone else’s labor.

After all, chopping cabbage and whatever other vegetables you want to include, such as celery, carrots, broccoli, etc. is a simple task that takes only minutes.

Mediterranean Zucchini with Eggs and Sweet Potato Fries
It’s that time of year when zucchini is abundant in gardens, the produce section of the grocery store, and at farmers’ markets.  There’s often so much of it coming in at once that gardeners don’t quite know what to do with it. One old joke says that mid to late August is the only time when residents of many small towns in New England feel the need to lock their car doors -- the reason being that if they don’t, well-intentioned neighbors will deposit bags of surplus zucchini squash on the seat.

Now, zucchini has a relatively short shelf life, even when refrigerated, so  I recommend using it as soon as possible. If you end up with more than you need, and it’s starting to go bad, here’s a quick way to store them for future use:

Wash them, cut off the ends and any damaged parts (don’t peel them), and then puree them to a liquid pulp in a blender. Freeze the zucchini puree in approximately 1-2 cup portions in ziplock bags, labeled and dated. The puree can be thawed at any time and used, among other things as a thickener for sauces – your family will not even realize it’s there -- and as a less calorifying substitute for oil to lend moisture to cakes, brownies,muffins and the like.

But there are, of course, many very nice recipes that call for zucchini, some of them wonderfully simple and fast, like the one here.

Spicy Salsa Bean Salad

It's a scorching week of weather this week, and this entree salad makes a satisfying and versatile dish that's perfect for when the temperature soars.  Or for when it doesn't. 

Come to think of it, it's great just about any old time. 

To give you an idea about its versatility:
  • It can be vegetarian, as described here, but is also very nice with a couple of cups of cut up chicken; 
 
  • It can be made with pasta, with rice, or simply served with tortilla chips. That means that for those with celiac disease or gluten intolerance, it can easily be made gluten free;

Stuffed Cabbage Made Easy

Unstuffed Cabbage
​Cabbage is a powerhouse vegetable, full of all kinds of great nutrition. I love it in just about any kind of recipe, and I particularly love it cooked as it is in corned beef and cabbage, in stir fry, or in this recipe.

However, I am definitely not fond of the extra work of filling and rolling individual cabbage leaves that's called for in traditional stuffed cabbage recipes, so this variation is a great alternative. It's every bit as tasty, with substantially less work and time involved. You can have it on the table in a very short time without breaking a sweat.

It’s a very simple one-pot meal that you can cook on the stovetop - my absolute favorite type of meal.  And although I’ve never done it, I’m betting that it would make a great choice for a slow cooker meal. It's also quite economical, even though it contains meat, one of the most expensive sources of protein there is.
